Marigolds, Kale, Rhubarb

This summer I’ve been able to gift many goodie bags from my garden. It makes me happy to share. Sharing is underrated.

Squash

On another note…I might also need a larger freezer, but that is a pleasant problem.

What are you grateful for today?

  1. You are amazing, Maria! A master grower of food. 😍 I’m grateful to be at my sister’s home in Michigan, its beautiful here and Las Vegas is getting extra hot with 111-113 degrees. πŸ”₯

    1. I do have a freezer, but I would use the extra space if I had a bigger one! I eat squash in every imaginable way. I grate squash and use it when I bake bread, I eat squash in salads, I roast it in the oven, and I use it in stews and soups. What is your favourite way of eating squash?

      1. I have a hard time finding ways to use zucchini, mainly because of my kids. 😊 I usually slice it, dip it in an egg wash, and fry it, or grate it into an omelette. Sometimes I add it to soups, and occasionally I sneak it into baked treats.

My kids aren’t big fans, so I usually pick the smaller zucchini and keep looking for new recipes. I think my favourite way to use it is grated into savoury pancakes (fritters?). And eat it with sour cream and dill :)

        1. Grating it into savory pancakes is something I did a lot when my son was little. He LOVED it. My daughter however is not a big fan. ..

          1. I guess I’m the fun of savory pancakes :) I like zucchini, but I struggle when plants start to give a lot :)

  3. What bounty! Sharing brings its own delight. Grateful that July has turned out to be an old-fashioned Maine summer where the temperature is just right. I know many parts of the world aren’t as lucky.

  4. Abundance! Hurrah! πŸ‘πŸΌ
Grateful for the fragrance of sweet peas, evening sunlight illuminating the red-purples of my smokebush, and the song of a wood thrush calling in the woods. Life is good! πŸ‘πŸΌ
