Welcome to the weekend coffee share! Can I get you a cup of coffee? Or tea? There’s vanilla pastries to go with your beverage. Would you like to try a traditional Swedish “vetelängd”? You bake it with the same kind of dough that you make cinnamon rolls with, but instead of cutting the long roll to pieces (like you would if you make cinnamon rolls) you use a sharp pair of scissors/knife, and make a pattern at the top of the long roll, and bake it as it is. Before serving the pastry you cut it into pieces, or simply let your guest cut a piece the size he/she desire. This time I had butter and vanilla as filling. Sometimes I have almond paste as well, but I skipped it this time. It is also common to have butter, and sugar/cinnamon inside.

How is your week? I’d say that my week is great! I worked Monday and had school Thursday and Friday, and now I’ve started a long Christmas break. I’ve taken vacation days to be able to spend time with my daughter during her Christmas break, that started yesterday. It is going to be wonderful to spend three whole weeks together, doing the things she likes to do. I am so grateful for this time. How are you going to spend this holiday season? I am planning on trying a gratitude practice 2026, sharing one photo a day of something that I am grateful for. Sometimes it is going to be only a photo, and sometimes I’ll write something about gratitude, related to the photo. The goal is for it to be a daily practice, but I am going to be kind to myself and not beat myself up about it, if I happen to miss a day here and there.   1. That pastry looks so delicious! I’ve been making dessert breads like banana nut with choc. chips and macaroons. They use honey or maple syrup instead of sugar, which I can’t have. I don’t feel like I’m missing the Christmas treats so much. :)

    1. Thank you so much Eliza! I’ll be honest with you and admit that I like baking Christmas treats and other pastries more than I actually enjoy eating them. I do love treating my friends to pastries and such :)

  2. Reading your description and seeing your photo of the vetelängd makes me feel the taste of it, even if it’s over 15 years since I’ve had one. I haven’t found a decent gluten-free alternative to them, I’ve made my own cinnamon rolls but nowadays I’m mostly not up to baking. I always make my pepparkakor and that’s all I need for the Advent season. We’re staying home for Christmas as usual and will have video chats with our families in Sweden. We celebrate Christmas with a mix of Swedish/Irish food, taking it easy, chocolate and Sällskapsresan.

    That’s wonderful for you to have 3 weeks off with your daughter. Enjoy!

    1. It sounds like a wonderful Christmas. We are also staying at home. video chats with family and friends far away are wonderful. My daughter’s family (on her father’s side) is in the US and we have video chats with them from time to time.

  6. That pastry looks yummy. I would love to try some Swedish pastry and I love how in Europe, there are all kinds of patries as opposed to the US where it seems like everything is either a cake or a cookie. Pastries make the food sound so much more…special, in my opinion.

    1. Thank you so much Yinglan! I believe you would love visiting a classic “konditori” in Sweden. It is like a fancier cafe, where they have traditional pastries and cakes made from scratch. At one of the better locations (often in the bigger cities, but not always) the pastries all look like pieces of art. The person who makes the pastries is not a baker, he/she is a “konditor” , and that requires more artistic work compared to only being a baker. I went to school to become a baker, in upper secondary school (age 15-18 years old). I took some classes in “konditori” but I never did the final test to become a “konditor”.
